Ingredients

33.5g Lemon juice, fresh

10g KetoCal 4:1 Powder- Vanilla (available on prescription)

60g Cream, fresh, double, including Jersey cream

10g Lemon peel

10g Hoosiel Hill Farm icing sweetener

2.5ml Vanilla extract, sugar free

27g Raspberries, raw

33g Blueberries, raw

         

Method

1. Zest lemon into a small saucepan then add cream, KetoCal and sweetener.

2. Place on a low heat and simmer for 2 minutes.

3. Juice lemon and add to pan with vanilla extract and whisk for 1 minute.

4.  Into a small bowl or jar add lemon cream mixture, place in the fridge to chill and set.

5. To serve add the fresh raspberries and blueberries on top.
