Boboti is a well-known South African dish consisting of spiced minced meat baked with an egg-based topping.  You will go a long way to beat Sarah Barker's incredibly yummy keto version!

Ingredients

10g butter

60g lean beef mince

15g spring onion

56g courgette (or 111g celery)

50g mushroom

15g Gia Sun-dried Tomato Puree

8g eating apple

Pinch of nutmeg

Pinch of clove

Pinch of cinnamon

1 bayleaf

30g double cream

10g cheddar cheese

                         

Method

Melt butter in a frying pan. Add beef mince and spices and fry until browned.

Add vegetables, tomato puree, bay leaf and a dash of water to the pan.

Cook on a medium heat for 5 minutes.

Stir in the apple (if you have more carbohydrate allowance, use sultanas).

Remove the bay leaf and press mixture into a heatproof casserole dish.

Pour cream over and top with cheddar.

Bake for 35 minutes at 180C.

Serving Tips 

Serve with a salad.
