Ingredients

12g Cauldron Authentic Tofu

2g Curry powder

16g Spinach, baby, raw

11g Onions, raw

15g Tomatoes, canned, whole contents

8ml coconut milk (canned)

8g Oil, olive

9ml Calogen Neutral (available on prescription)

                                

Method

1. Finely chop onions.

2. Finely chop tofu.

3. Finely chop spinach.

4. Heat oil in a pan. Add onions and fry till soft, add curry powder and heat through.

5. Add tomatoes and cook for 5 minutes on low/medium.

6. Add finely chopped spinach and tofu and cook for a further 3 minutes.

7. Add coconut milk and calogen and turn off heat.

8. Serve, making sure to scrape everything from the pan.
