Ingredients

25g Sweetener, Truvia

50g Almonds, flaked

40g Eggs, chicken, white, raw

3ml Vanilla extract, sugar free

10g KetoCal 3:1 Powder (available on prescription)

         

Method

1. In a food processor mix flaked almonds, KetoCal and sweetener, pulsing until the texture of almond flour.

2. Add egg white and vanilla and pulse a few more times. It should look like wet sand in texture.

3. Take teaspoons of mixture and with wet hands roll into small balls. Place on a lined baking sheet.

4. Bake at 170C for 10-15 minutes until cookies are set and golden brown.

5. Allow to cool on the baking tray.

6. Once cooled store in an airtight container.
