210g Morrisons shredded jackfruit, drained

40g butter

231g eggs

40g butter

100g Morrisons double cream

60g Groovy Food coconut flour

10g baking powder, Barkat (carb-free)

21.3g Sukrin icing

2 splashes of Sugar-free banana syrup



1. Drain jackfruit, discard any seeds and put in a small pan with 40g butter and sukrin icing. Cook for 7-8 minutes. Leave to cool.

2. Preheat oven to 160 fan.

3. Whisk eggs until foamy, pale and doubled in volume.

4. Melt remaining 40g butter, leave to cool.

5. Add double cream and 2 generous splashes of banana syrup to the eggs and whisk. Add melted butter as you whisk.

6. Add coconut flour and baking powder, then fold in jackfruit. Taste and add more banana syrup if needed.

7. Spoon into loaf tin. Bake for about 45 minutes until golden brown.

8. When cool, cut into 10 slices.

9. Store at room temp or in fridge.
