25g cooked chicken

20g aubergine

25g courgette

10g onion

10g Gia sundried tomato puree

15g olive oil

15g coconut cream



Cook the onion, aubergine and courgette in olive oil in a frying pan. (Courgette and aubergine are very good at absorbing the oil.)

Once softened, add cooked chicken, tomato puree and a small amount of water. Season with a little salt, pepper and dried mixed herbs.

Cook until liquid has thickened.

Serve with watered-down coconut cream to drink.



Gia sundried tomato puree has high olive oil (fat) content and is low in carbohydrate. It is available in many supermarkets.
