Ingredients

For the biscuits

48g almond flour flurry, Holland & Barrett

22g butter, softened

10g fiberflour (eg Longevity)

24g beaten egg

a few drops of flavouring eg. almond extract

sweetener eg. 20 drops Hermesetas

For the filling

16g butter, softened

32g Sukrin icing

9g Walden Farms strawberry fruit spread

Method

For biscuits

1. Preheat oven to 160 fan

2. Mix all the ingredients to form a dough

3. Divide into 6 round flat cookie shaped portions on a silicon mat on a baking tray.

4. Make a hole in the centre of 3 of these and bake in the oven approx 10 minutes until golden.

For the filling

1. Mix the softened butter with the sukrin icing then add a few drops of flavouring eg. Vanilla.

To assemble

1.When biscuits are cool, spread a blob of butter icing on the biscuit (without the hole).

2. Then add a small blob of strawberry spread (about 3g) on top of the butter icing.

3. Place biscuit (with hole) on top.
