Ingredients

100g Almonds, flaked and ground

5g Baking powder, carb free, Barkat

47g Butter, unsalted

30g Cheese, cream, Philadelphia

45g Hoosiel Hill Farm icing sweetener

35g Eggs, chicken, whole, raw

4g Lemon peel

5ml Lemon extract, Waitrose

25g KetoCal 3:1 Powder (available on prescription)

         

Method

1. In a small saucepan melt butter, cream cheese and lemon peel. Allow to cool.

2. In a bowl mix almond flour, KetoCal, baking powder, sweetener and lemon extract.

3. Stir cooled butter mixture and egg into dry ingredients to form a soft dough.

4. Weigh out or add teaspoons of cookie dough onto a lined tray leaving 1/2 inch between each cookie.

5. Bake at 170C for 8-10 minutes until pale golden. Allow to cool on the tray.

6. Store in an airtight jar or freeze until needed.
