60g raw aubergine

15g olive oil

10g raw 20% fat lamb mince

10g raw spring onion bulbs

2g Gia garlic puree

3g Gia tomato puree

30g canned tomatoes

10g Feta cheese

15g raw cucumber

10g iceberg lettuce


1. Preheat the oven to 200C.

2. Score the flesh of the aubergine in a criss cross. Place in a small oven-proof dish. Brush with about half the oil. Bake for approx 30. mins.

3. Fry the mince and onion and soften with tomato and garlic puree, pinch of mixed herbs, salt and pepper.

4. Add the tomatoes.

5. Remove the aubergine from the oven and spoon over the mince. Crumble over the feta cheese and return to oven for 5 minutes.

6. Serve with cucumber and lettuce.
