Ingredients

64g Pumpkin, flesh only, boiled in unsalted water

15g Spring onions, bulbs and tops, raw

11g Olive oil

30g Curly kale, boiled in unsalted water

30g Mushrooms, white, raw

         

Method

1. Boil or steam the kale until tender.  Drain and allow to cool slightly. 

2. Chop the mushrooms and onions and fry in oil until soft. 

3. Add the kale and season with salt and pepper. 

4. Add the mashed pumpkin and stir to combine. Fry until golden on one side then flip over and brown on the other side.

5. Serve hot or cool and freeze until needed.
