Ingredients

12g cooked sausage (e.g. Debbie & Andrew’s 97% pork sausage)

15g chopped, fresh tomato

20g egg

5g double cream (Tesco)

10g cucumber

10g full-fat mayonnaise

4g olive oil

Salt, pepper and a pinch of dried herbs to taste

                                

Method

Preheat oven to 170C/325F/Gas mark 3.

Mix egg and double cream together. Season with salt, pepper and a small pinch of dried mixed herbs to taste.

Add chopped tomato and pieces of cooked sausage to a silicone cupcake case.

Pour over egg and cream mixture and bake in oven for 18-20 minutes until firm.

Mix mayonnaise and olive oil together and serve with quiche and cucumber.

 

Serving Tips

These quiches are great to batch cook and freeze. Try other variations

e.g. sausage and mixed peppers, salmon and asparagus etc.
