Ingredients

150g ground almonds

100g butter

18g egg yolk

1 teaspoon of mixed spice

15g peanut butter

1 drop of Truvia (calorie-free) or Hermesetas liquid sweetener

                         

Method

Heat oven to 180C/350F/Gas mark 4.

Beat together the butter, peanut butter and sweetener until well combined. 

Add the ground almonds, mixed spice and egg yolk. Mix to form a soft dough and then refrigerate for 20 minutes.

Roll dough out carefully between two sheets of greaseproof paper (to stop it sticking to the rolling pin) and cut into 12 equal shapes with a biscuit cutter.

Cook for 12 minutes.

 

Serving Tips

Delicious as a snack or turn into a dessert with berries and whipped cream.
