Ingredients

90g Pumpkin, flesh only, boiled in unsalted water

8g Butter, unsalted

5ml KetoCal 4:1 LQ Unflavoured (available on prescription)

         

Method

1. Chop and deseed the pumpkin. Steam or boil until soft. 

2. Drain and allow to cool. 

3. Once cool mash the pumpkin with a fork.

4. Add the butter and Ketocal LQ to a small pan.  Heat until melted.

5. Add the mashed pumpkin and stir to combine, season with salt and pepper and stir until heated.

6. Serve warm or allow to cool and freeze until needed.

Top Tip

This easy make ahead recipe can be used as a side dish or as a topping for cottage pie.
