Ingredients

1 Lo-Dough (low carb bread alternative)

20g butter

1 tin of tuna in brine, drained

56g courgette

20g purple sprouting broccoli

31g spring onion

33g cherry tomatoes

360g whole, raw egg

30g cheddar cheese

                         

Method

Line a 7 inch cake tin with greaseproof paper and place Lo-Dough in the tin.

Spread butter on top of the Lo-Dough followed by the tuna.

Chop the courgette and broccoli into small pieces and scatter on top of the tuna.

Slice the spring onions and tomatoes and sprinkle over the top.

Beat eggs well and pour evenly over the vegetables and tuna.

Grate cheese, sprinkle over quiche and bake in oven at 180C for 35 minutes.

 

Serving Tips

You could use any lower carb vegetables i.e. celery, green peppers, mushrooms etc.

To lower protein you can exchange eggs for more cream, your dietitian can help you with this.

Perfect with celeriac chips, salad and lots of mayonnaise.
