Ingredients

For the beef nachos

1 Lo-Dough (low carb bread alternative)

10ml MCT Oil for frying (available on prescription)

60g lean beef mince

1 large mushroom

16g spring onions

15g red kidney beans

Pinch of smoked paprika

10g Gia tomato puree

1 small piece of sun-dried tomato

 For the guacamole

91g cooked broccoli

Pinch of chilli

20g natural yoghurt (Yeo Valley - full-fat)

Splash of lemon juice

25g Cheddar cheese, grated

                         

Method

Cut Lo-Dough into small pieces and fry in MCT oil until golden brown. Remove from pan.

Add beef mince, mushrooms and half the spring onions (8g) to the same pan and gently fry.

Add kidney beans, smoked paprika and tomato puree to the pan and add a little water to loosen the mixture if needed. 

Make the guacamole by blending broccoli, sun-dried tomato, remaining spring onion (8g) and chilli in a food processor or blender with some water to loosen the texture and place in a small bowl.

Mix yogurt with lemon juice and place in a small, separate bowl.

Serve all together with some grated cheese on top.
